I made these muffins the other day with a few changes. I can eat eggs, so I just used two eggs, and I didn’t have any buckwheat flour so I used teff. It worked out well!
Relatedly, whenever I make a muffin recipe that says it’ll make 12, I end up with 16. I use standard size tins and everything, but that’s just the way it works out.

Yes, our artichokes hearts are gluten-free and manufactured in a gluten free facility. All of our vegetable products are gluten-free and the only item we sell that are not gluten-free are pasta products.
